Department: Food & Beverage – Front of House
Direct Report: Front of House Supervisor / Restaurant General Manager
Purpose: Support Servers and Bartenders in delivering elevated dining service at Theodosia by maintaining dining room cleanliness, assisting with food delivery and table maintenance, and ensuring operational readiness aligned with EOS Hospitality and Sanderling Resort standards.

The Sanderling Resort, located in Duck, North Carolina, is the premier oceanfront destination in the Outer Banks, offering refined coastal hospitality, elevated culinary programming, and memorable guest experiences. Theodosia serves as the resort’s signature, chef-driven dining experience, celebrating regional ingredients, seasonality, and sophisticated yet welcoming service.
The Server Assistant plays an essential role in ensuring seamless service execution. This position supports front-of-house operations by maintaining cleanliness, organization, and service flow while contributing to an exceptional guest experience.
JOB SUMMARY:
- Assist Servers and Bartenders in maintaining smooth and efficient dining room operations
- Deliver food to tables promptly and accurately, ensuring proper presentation and correct seat placement
- Clear used plates, glassware, and utensils in a timely and professional manner
- Reset tables according to Theodosia standards including proper placement of flatware, glassware, and linens
- Maintain cleanliness and organization of service stations, side stations, and dining areas
- Polish glassware, flatware, and silverware as required
- Monitor water levels and assist with refilling beverages when appropriate
- Support bar and service well with glassware restocking and ice replenishment as needed
- Assist with bread service or additional table touches as directed
- Maintain full knowledge of table numbers, seating charts, and service flow
- Communicate effectively with Servers and Culinary team to ensure proper timing and coordination
- Assist with opening and closing duties including sweeping, mopping, stocking, and sanitation tasks
- Maintain restroom cleanliness checks as assigned
- Participate in daily pre-shift meetings to review operational focus and service expectations
- Practice proactive hospitality by assisting guests when appropriate and directing questions to Servers or Supervisors
- Follow safe work practices including Emergency Procedures, Accident Reporting, and workplace safety standards
- Attend meetings and training sessions as required
- Comply with all policies outlined in the Handbook, Property Supplement, or otherwise issued including time and attendance expectations, uniform standards, anti-harassment policy, and workplace conduct
ESSENTIAL FUNCTIONS OF THE JOB:
- Ability to remain standing and walking for up to 10 hours
- Ability to move quickly in a fast-paced dining environment
- Ability to regularly lift and carry up to 40 lbs (bus tubs, trays, glass racks)
- Ability to bend, reach, and lift items from floor level and overhead storage
- Ability to visibly inspect table setup and cleanliness details
- Ability to communicate and exchange information effectively with guests and team members
- Ability to read, write, speak, and understand basic English
- Ability to complete a satisfactory background check
- Ability to work flexible hours based on business needs including evenings, weekends, and holidays

- Work will primarily take place in a hotel resort and restaurant dining room environment
- Fast-paced service setting with seasonal fluctuations in volume
- Frequent collaboration with Servers, Bartenders, and Culinary team
- Exposure to moderate noise levels and food & beverage service environment
KEY SKILLS & EXPERIENCE REQUIRED:
- Previous restaurant experience preferred but not required
- Strong work ethic and willingness to learn
